Date, maple and ginger cake
INGREDIENTS
1 1/2 cups of pitted dates
1/2 cup of boiling water
1/3 cup maple syrup
1 egg
1/4 cup of vegetable oil
1 cup flour
1/2 cup whole wheat flour
1 teaspoon of baking powder
1/2 teaspoon sodium bicarbonate
1/2 teaspoon ground ginger
1/4 teaspoon of salt
maple sugar
PREPARATION
1. In a bowl, mix the dates and boiling water. Let stand for 10 minutes and reduce to a smooth purée.
2. In a large bowl, combine date purée with maple syrup, egg, oil, flours, baking powder, baking soda, ginger and salt. Pour the mixture into an 8-inch (20 cm) diameter round baking pan, oiled. Bake in the preheated oven at 350 ° F (180 ° C) for 30 to 35 minutes. Once the cake is out of the oven, sprinkle with maple sugar.
