Mediterranean chicken breasts
INGREDIENTS
2 large chicken breasts (about 1 lb / 500 g total)
1 teaspoon dried tarragon
1 teaspoon dried oregano
2 tablespoons of olive oil
6 oz broccolini or broccoli cut into small bunches
1 yellow pepper, roughly chopped
2 garlic cloves, finely chopped
1/4 cup chopped black olives
1/2 cup of dry white wine
1/2 cup crumbled feta cheese
2 tablespoons fresh basil, chopped
salt and pepper
PREPARATION
1. Using a sharp knife, cut the chicken breasts in half horizontally. Sprinkle each side with tarragon and oregano. Salt and pepper. In a large skillet, heat 2 tbsp. (10 ml) oil over medium-high heat. Add chicken and cook for 4 minutes or until lightly browned (turn halfway through). Put the chicken on a plate and set aside.
2. In the skillet, heat remaining oil over medium-high heat. Add the broccolini, pepper, garlic and olives, and cook, stirring occasionally, for 2 minutes. Add reserved chicken and white wine, cover and let simmer for 4 minutes or until chicken has lost its pink hue inside. Remove from heat and sprinkle with cheese and basil.

This dish is cooked with whole grain (quinoa, barley, farro, etc.) to add fibre.
