Corn and zucchini patties
INGREDIENTS
4 eggs
1/4 cup of olive oil
2 tablespoons chopped fresh basil
3 cups zucchini grated and drained
1 cup cooked corn kernels
1 cup grated cheddar cheese
1 1/2 cups flour
2 teaspoons of vegetable oil
sour cream
lemon juice
salt and pepper
PREPARATION
1. In a bowl, combine eggs, olive oil and basil. Salt and pepper. Add zucchini, corn and cheddar, and mix. Stir in the flour.
2. In a large skillet, heat vegetable oil over medium heat. Pour about 1/4 t (60 ml) of dough per pancake (cook 4 at a time). Flatten the patties with a spatula and cook for 3 to 4 minutes on each side or until the patties are golden brown. Repeat with the rest of the dough (add oil if necessary). Serve the patties with a mixture of sour cream and lemon juice.
Makes about 12 patties
